Florida Steak Club Hits Las Vegas And Raises $7,000 For Veterans’ Service Dogs

Las Vegas witnessed a first-of-its-kind debut this month as the Red Meat Lovers Club launched its first permanent chapter outside Florida, turning a downtown warehouse into a mission-driven fundraising powerhouse.

The January 21, 2026, event raised $7,000 for Southern Cross Service Dogs, a nonprofit that provides highly trained service dogs to veterans at no cost.

The invitation-only gathering took place at The Doyle, a restored 1949 warehouse in downtown Las Vegas, where business leaders, entrepreneurs, and community advocates gathered for what the club calls a “meating for a mission.”

Where Meat, Money, And Mission Collide

Founded in 2017 by Evan Darnell, the Red Meat Lovers Club may sound like a tongue-in-cheek dining society, but the results are serious.

Since its launch, the group has raised more than $2.5 million for charities nationwide through live auctions, raffles, and high-end culinary experiences.

The Las Vegas debut followed that same formula: unlimited meat-forward dining, open bars, and networking, all tied directly to charitable giving.

Organizers say the club’s refusal to separate business from philanthropy is exactly why the model works.

Unlike traditional charity galas, the focus is on shared experience rather than formal appeals. Attendees come for the food and connections, and leave having funded real-world impact.

A Downtown Venue With A Story Of Its Own

The choice of venue was deliberate.

The Doyle, located at 418 West Mesquite Avenue, was restored by artist Steven Spann and singer-songwriter Mary Ellen Doyle, transforming an industrial shell into one of downtown’s most distinctive event spaces.

With soaring ceilings, exposed wood trusses, whitewashed brick walls, and natural light, the space underscored the club’s desire to embed itself in the local community rather than rely on Strip spectacle.

Downtown Las Vegas has been undergoing a quiet renaissance, and the event positioned the Red Meat Lovers Club squarely within that movement.

Michelin-Level Talent On The Grill

Leading the culinary experience was Chef Gilleum Marcoux of Smokey Jay’s Florida Style BBQ, a Michelin-starred chef with more than two decades of experience in top-tier kitchens.

His presence elevated the night from indulgent feast to curated dining experience.

Las Vegas may be famous for its steakhouses, but organizers said partnering with a Michelin-caliber chef reinforced that the club’s culinary standards match its philanthropic ambitions.

Why The Cause Hits Home In Las Vegas

The funds raised went directly to Southern Cross Service Dogs, which trains and provides service dogs to veterans free of charge.

The work is particularly relevant in Southern Nevada, home to one of the nation’s largest veteran populations and a community still grappling with housing insecurity and mental health challenges.

Research continues to show that service dogs can significantly reduce symptoms of PTSD, anxiety, and depression in veterans, often within months of pairing.

With training a single service dog taking up to 18 months, every donation directly translates into tangible, life-changing support.

The organization also partners with Tunnel to Towers Foundation, expanding its reach to veterans and first responders nationwide.

Local Leadership And What Comes Next

The Las Vegas chapter is led by hospitality professional Destyn Hamada, who now serves as the club’s local “Secretary of Steak.”

Organizers confirmed the next Las Vegas event is scheduled for April 15, 2026, signaling a long-term commitment to the city rather than a one-off appearance.

The group is actively recruiting local business partners, known internally as “Partners in Prime,” to support future events and expand the club’s charitable footprint.
